Oh yes, very tricky, but “I’m” is a contraction which is the shortened version of “I am.” The definition of a sentence is that it must contain a subject and the predicate, so, oh, what do we have here? Yes, very good. “I” is the subject and “am” is, in fact, the verb. Do we have a sentence? Yes.
Oh, bonus question! What is “not” in this sentence? It is an adverb, of course! As you most certainly already know, “not” is always an adverb!
